It’s hard to believe Spring has officially sprung. If your town is like Seattle, it seems like Old Man Winter is determined to stick around.

What’s the quickest way to improve your mood?

Dessert!

If your friends or family give you the side eye, you can claim you’re practicing for the upcoming holidays. (It’s hard to believe, but Passover and Easter are just two weeks away.)

Here are three of my go to picks – all crazy easy:

  1. With the exception of fresh oranges, the orange olive oil cake uses pantry ingredients and comes together in minutes. It’s a nice finish without being too heavy or sweet. It keeps well, too. The perfect taste of Tuscany!
  2. No springform pan in your kitchen? No problem. Impress guests with “cheesecake” and fresh berries. For beginner cooks (and that means putting your kids to work), it’s just three easy steps.
  3. Are you short on time? Try the Lemon Yogurt Cake from the Barefoot Contessa. It comes together in a snap, and you have the next 50 minutes to relax once you put it in the oven. Plus, it’s great for brunch the next day. Bookmark the link for your next baby or wedding shower menu.
